    GRAPE VARIETIES: 100% Glera
    VINEYARD: Risano
    SOIL: clayey-limestone and coarse sandstone.
    ORIENTATION: south-west.
    ALTITUDE: 50m/asl.
    TRAINING SYSTEM: Double Guyot
    VINE DENSITY: 4,000 vines per hectare.
    VINIFICATION: the grapes are destemmed and undergo soft crushing. Fermentation takes place at a controlled temperature.
    SPARKLING WINEMAKING METHOD: Following the Italian method, the base wine is disgorged into a pressurized tank where it remains for 60 days allowing second fermentation to take place at a constant temperature of 16-18°C. The sparkling wine is then filtered and undergoes cold stabilization.
    ALCOHOL: 11.5%
    RESIDUAL SUGAR: 10 g/l.
    TOTAL ACIDITY: 6.5 g/l.

    Tasting notes

    PAIRING: It makes an ideal aperitif, but perfectly complements all courses, fish, white meat dishes, spicy and hot dishes, and vegetables. It is great with Oriental cuisine
    SERVE: at 8°C.
